Restaurants and pubs

You chose every wine. Your floor should know why.

Vinterest Teams trains each person on your list and your menu, to the standard their role needs, and tells you who's there before the doors open.

A wine's card: what to say, what it tastes like, the dishes it suits
Ready means

Ready at the bar isn't ready in the dining room.

Each role has its own bar. These are where we start; you move them.

Pubs and bars

The glass list, cold.

One honest line about every wine you pour by the glass, and the dish it suits. Five questions before a shift keeps it there.

Restaurants

The glass list and the menu.

Every glass by heart, most of the bottles, and what to pour with each dish, so the answer is there before the guest asks.

Fine dining

All of it, and the differences.

The whole list, and why this Meursault rather than that Chablis. Your sommelier sets the standard; the team is tested against it.

When the list changes

New list on Tuesday. Known by Friday.

Photograph the new page, or one new bottle. Vinny says what's new, what's gone and what changed, and nothing reaches your staff until you approve it.

A new vintage is the same wine moving on. Nobody starts again.
A new wine gets its card, its pairings and its drinking window, then goes to the people who'll pour it.
A wine you drop leaves everyone's drill the same day.

What the till knows

The wine nobody sells is usually the wine nobody can describe.

Bring in a sales export from your till and the console puts the two side by side: what's moving slowly, and how many of your team could talk about it tonight.

Vinny's test goes first to what sells and they can't yet talk about.
Sales never change anyone's readiness. They decide what gets learnt first.
Any till's export works today. Square is next.

Before Saturday

Who needs what, in one list.

Answers fade, wines arrive, someone skips the drill for a fortnight. The console shows each person what they're short of, so the five minutes before service go where they count.

What needs attention: each person's faded answers, new wines and overdue drills
Test your list

Ten of your wines, as your staff would learn them.

Upload one page of your list. Vinny reads ten wines and shows you their cards in a minute; we follow with a readiness plan for your floor.
